No Animals Were Hurt In The Making of These Power Bars

I’m not even sure what to call these since nutritional-wise they fall somewhere between a granola bar and a power bar.

What I know is this: I was able to incorporate spinach, carrots, garbanzo beans, whole wheat flour, oats, peanut butter, and banana into a super healthy, portable, freezable bar.  They are the perfect on-the-go snack or meal addition for Geneva.  They are a good breakfast replacement for me also, should I find myself at the gym in the morning before work (travels better than my usual oatmeal and has more fiber, protein, and vitamins).

I completely made this recipe up, armed with healthy ingredients and an end goal in mind.

Additionally, No animals were hurt in the making of these bars.  I did not set out to make them ("*gasp*) Vegan, but that is just what happened whenever I combined passel of plant-based products. 

Coming in at about 5.9 of protein for a 1.5 inch x 3 inch bar, one serving has about as much protein as an egg yolk or 1/2 c. of yogurt.  A serving has more protein than a 1/2 c. of milk, a Tbspn of peanut butter, or an ounce of nuts.

As a bonus, they are a good source of Potassium, Vitamins A, B-6, C, and Iron.  Plus other minerals.
