Short post. Toddler/ baby food.

I've got so much to say about what has been going on but it has been a long and busy day. Stay with me and get caught up soon :-)

For the moms out there, I want to tell you about two easy, yummy (I swear!), nutritious things I've made for Geneva. Both inspired from the Super Baby Food book by Ruth Yaron.

They are two sandwich/ tortilla/ veggie spreads that g ate with gusto. I also like them.

Both use white beans/garbanzo beans as base and are blended in a food processor/ blender.

First one we tried: blend one cup cooked beans with a tablespoon of cream cheese plus one banana. G loves bananas and therefore loved this on toast. Greg and I finished it off on our pancakes Sunday morning. Add a bit of citrus for storage.



Second: blend beans with handful of fresh spinach leaves and one avocado. This was very mild in taste and could be seasoned to your preference. G loved it on a wheat tortilla but it would also be good as quesadilla topping or veggie dip. Beautiful green color. Add bit of citrus or avocado seed to store it.

There you go- yummy and easy ways to sneak in veggies and protein for toddlers, kids, and adults.
